The best way to temper the summery, fruity filling is to use a classic water bath or your tempering device to 20-25 °C, and then use a piping bag with a fine nozzle to pipe praline pearls made of white chocolate. If you wish, you can further refine the praline filling with currant flavor, for example with delicious fruit pastes or a crispy crunch.
