Praline masses have an excellent taste, a delicate melt and are ready to use. You can fill the praline mass directly into chocolate hollow bodies or praline shells. Warm the praline mass slightly to obtain a more liquid consistency. Refine the praline mass to your taste, e.g. with alcohol, nuts, flavor pastes or crispies. The praline masses do not contain water. This has the following advantages over normal ganache fillings, which are made with boiled cream: Ingredients such as crispies cannot absorb moisture and therefore remain crunchy. Your finished pralines stay fresh longer and you experience a more intense flavor.
250g praline mass is enough for half a layer of praline hollow bodies.
