Instructions
Ingredients (for 24 macarons)
48 green macaron half-shells
For the filling:
75g softened butter*
50g icing sugar*
30g apple flavouring paste
5g lime fruit powder
2 tbsp milk*
For the fizzy surprise:
Lime fruit powder
Popping crispies
*These items are also required and are not included.
For the filling, briefly beat the butter in a stand mixer or with a hand mixer. At low speed, add the icing sugar one spoonful at a time. Then mix in the apple flavouring paste, lime powder and milk.
Whip the mixture for approx. 10 minutes until pale and creamy. Using a piping bag fitted with the nozzle, pipe the filling in a circle onto half of the macaron shells. Place a little lime powder caution: sour and some popping crispies in the centre. Add the top shell and press down gently.
Tip: Popping crispies and lime powder are hygroscopic. Humidity can affect their consistency and entertaining popping effect. Store opened packs in an airtight container and use the products promptly.
