Instructions
Ingredients (for 5 pieces of each variety)
Frozen Piña Colada chocolates:
100g pineapple (puréed)*
50ml Batida de Coco
15g sugar*
100g Cake Pop Coating, pearl white
Frozen Strawberry Limes chocolates:
100g strawberries (puréed)*
50ml Strawberry Limes
15g sugar*
100g Cake Pop Coating, carmine red
Frozen Tequila Orange chocolates:
100g skinless orange segments
(puréed)*
25ml tequila
15g sugar*
100g Cake Pop Coating,
sunset orange
For the ice bowls:
Balloons, water*
Preparing frozen cocktail chocolates
Fill enough balloons with water to make the desired number of bowls and freeze them. After approx. 5 hours, cut open and remove the balloons. Warm a saucepan, place the frozen bowl upside down in the pan and allow it to melt slowly (caution: the water inside the bowl will suddenly run out). Melt the surface of the frozen bowl until the desired bowl shape has been achieved. Then return the finished ice bowl to the freezer. Alternatively, fill a plastic bowl of the desired size with water and freeze it.
For each variety of cocktail chocolate, stir the fruit purée together with the sugar and alcohol and pour the mixture into the chocolate mould. Fill the cavities to the top and freeze. After approx. 1–2 hours, the chocolates can be released from the mould. Return the released chocolates to the freezer immediately.
Carefully melt the Cake Pop coatings in a bain-marie or in the microwave on a low setting. Insert a toothpick into the underside of a chocolate and dip it briefly into the coating. Remove the toothpick and return the chocolate to the freezer.
Arrange the frozen chocolates in the ice bowl, decorate as desired and serve ice-cold.
