Coffee Liqueur 20% vol 50ml
Cappuccino crispies 20g
Paper Cups 25mm brown 100 pieces
Pastry bags small 25 pieces
Disposable Icing Bags small 10 pieces
Packaging for 8 truffles; chestnut-coloured

Instructions:
Ingredients for 27 pralines
hollow truffles:
27 cups plain
Filling:
60g cream*
100g whole milk couverture
10g aroma oil cappuccino
10ml coffee liqueur Tia Maria
Decor:
100g German milk chocolate couverture Kondima
cappuccino crispies for decorating
*These ingredients you will also need.
Preparation:
Bring the cream to the boil, then remove from the heat and add the couverture. Stir until the couverture has completely dissolved. Allow the mixture to cool to about 25°C and add the aromatic oil and coffee liqueur and stir until smooth. Divide the filling evenly into the cups using a disposable piping bag and chill overnight if possible.
Temper the couverture and pipe a thin layer over the filling using a paper piping bag. Garnish with crispies.
