Grandma's Baked Apple Cake with Vanilla Cream
This baked apple cake is a true classic that evokes memories. Gently steamed apple slices are lovingly layered on a light sponge cake and covered with a delicate vanilla cream. During baking, a delicious interplay of fruit, cream, and pastry emerges - rounded off by a light sheen from the apricot jam, which gives the cake a noble, fruity note.

Preparation of Baked Apple Cake with Vanilla Cream
(Package contents: 600g baking mix, 225g cream powder)
You will also need: 5-7 apples, 120ml milk, 5 eggs or 250g (size M), 450g butter, 500ml cream, optional: 200-250g apricot jam or powdered sugar
Peel and quarter 5-7 apples and sauté for approx. 15 minutes in the oven at 175°C (top/bottom heat). Beat softened butter until creamy/white. Add eggs and beat in a food processor or a hand mixer with a fine whisk. Beat in the milk until the mixture is smooth. Add the baking mix and continue stirring for approx. 1-2 minutes. Pour the baking mix into a 26cm springform pan (optional: cake ring) and smooth it down. Whip the vanilla cream and cream for 3 minutes. Spread a generous amount of cream on the bottom of the stewed apples using a tablespoon or a piping bag and lightly press the bottom into the base. Bake in a preheated oven at approx. 175-180°C (top/bottom heat) for 60-70 minutes (cover with baking paper for the last 20 minutes if necessary).
Optional: Bring the apricot jam to the boil and brush the cake to a shine after baking or sieve with powdered sugar.
