Pesto flower baking set
This baking set contains a 550 g burger-bun baking mix, 200 g Mediterranean paste for bread and rolls, a 12/16-portion cake divider, a 28 cm cake board and a recipe card with recipes for pesto Genovese, pesto Rosso and the pesto flower. The set is sold only as supplied; individual items cannot be exchanged.
Ingredients for one 28 cm flower
Burger-bun baking mix, 225 ml water*, 35 g butter or margarine*, 60 g homemade pesto Genovese and 60 g homemade pesto Rosso. *Required separately.
Preparation
Prepare the dough according to step 1 on the baking-mix pack and leave it covered at room temperature for about 30 minutes. Divide it into three equal pieces, shape each into a ball and roll each one to about 23 cm on a lightly floured cake board.
Spread the first circle with green pesto and place the second circle on top. Spread that circle with red pesto, add the final circle and let the stack rest for 10 minutes. Press the 16-portion divider lightly into the dough as a cutting guide. Cut the sections with a sharp knife while leaving the round centre intact.
Take two adjacent strips at a time, twist them twice in opposite directions and pull them slightly apart until the flower measures 28 cm. Repeat with all strips. Transfer on the cake board to a baking tray and leave covered for about 60 minutes, until visibly risen. Bake for about 20 minutes at 180 degrees C conventional heat and serve warm.
