Simit Sesame Rings an oriental classic, easily baked at home
With this baking mix for Simit Sesame Rings, you can easily bake a traditional pastry from Turkish cuisine at home. Simit are ring-shaped yeast dough rings that are crispy on the outside and soft on the inside coated in an aromatic sesame crust.
Originally from Turkey, Simit are a popular snack there. They are traditionally served for breakfast or as a savory side dish and are an integral part of oriental baking culture.
Typical flavor thanks to grape syrup and sesame
What makes Simit special is their characteristic crust. Before being rolled in sesame seeds, the dough balls are traditionally dipped in a sweet liquid. We recommend using grape syrup, which gives the pastries a delicate, slightly caramelized note and the typical golden-brown color.
Combined with the included sesame seeds, this creates the unmistakable flavor that makes simit so special.

Note:
For a particularly authentic result, we recommend dipping the dough balls in grape syrup before rolling them in sesame seeds.
You will receive a flour mix for the sesame rings, 100g sesame seeds, and a separate packet of dry yeast. You will also need 9g of neutral cooking oil (e.g., rapeseed or sunflower oil) at room temperature, 150g water (approx. 26°C), and 150g milk (approx. 26°C). For the decoration: 100ml grape syrup, 100ml water

Preparation:
1. Place the entire flour mixture and the yeast into a mixing bowl and stir everything together. Add 150ml water and 150ml milk (both at approximately 26°C). Knead everything slowly in a stand mixer for 5 minutes. Now add the oil and knead quickly for another 10 minutes. 2. Let the dough rest, covered, at room temperature for approximately 30 minutes. 3. Divide the dough into 9 equal pieces (approximately 190g each), shape them into rounds, and then roll them out into oblong shapes. Let the dough rest, covered, for 10 minutes. Then roll each strand out to a length of approximately 60cm. Fold each end over itself by about a third of its length, then twist both ends around the resulting loop. Stir the grape syrup with the water, pour it into a shallow bowl or plate, and briefly dip the dough pieces in the mixture. Sprinkle with sesame seeds. 4. Place the finished ring on a baking sheet lined with parchment paper. Make sure the rings are spaced far enough apart. Cover the sesame rings and let them rise for another 60 minutes, until the dough has noticeably increased in volume. Bake in a preheated oven at 220°C (425°F) for about 10 minutes. The simit should be crispy brown on the outside and fluffy and soft on the inside.
