With Ruby chocolate, Callebaut is launching the very first variant intended for artisan chocolatiers and master confectioners. This new chocolate variety has an intense fruitiness and a fresh, sour note. At the same time, Ruby is produced all naturally without the addition of colourings or fruit flavours.
By pure chance, our cocoa experts discovered a chocolate with an extraordinary ruby red colour and fruity taste. Ruby cocoa beans grow in traditional cocoa-growing regions such as Brazil, Ecuador and the Ivory Coast. Their typical raw materials provide the unique ruby red colour and taste.
Cocoa content: min. 32.8%
Ideal for making pralines, cakes and desserts.
Temperature curve:
Melting temperature: 45°C
Crystallisation temperature: 27°C
Working temperature: 28.5 - 29.5°C
The Callebaut brand is now 100% sustainable! What does that mean exactly? The cocoa and chocolate products are traceable back to the cocoa farmer cooperatives! By working with the Cocoa Horizons Foundation, a non-profit organisation, the manufacturer ensures that sustainably grown beans are sourced directly from registered farmer groups.
