These chocolates are guaranteed to make eyes pop! Instructions

Ingredients (makes 40)
Shells:
Monster eye half-shells

For the filling:
140g Belgian lemon chocolate
80g heavy cream*

For sealing: 150g white chocolate

Preparing the Monster Eyes


For the filling, bring the cream to a boil and remove from the heat. Add the lemon chocolate and stir until completely dissolved.

Allow the mixture to cool to 25°C. Using a piping bag, fill the half-shells to just below the rim. Later—ideally the next day—temper the white chocolate and seal the shells. To do this, pour the chocolate over the filled pralines and smooth it out with the back of a knife or a spatula. Then, scrape off the excess chocolate.

Once the chocolate has set, chill the pralines for an hour and then unmold them. Place the finished pralines into the purple paper cups and watch as the green magic makes your guests' blood run cold.
